As the calendar turns to a new year, the tradition of setting resolutions often prompts reflection on personal goals and aspirations.

For many, including myself, this ritual extends beyond self-improvement of culinary adventures and innovations in my meal preps. I want my kitchen to become a canvas for creativity, where I can really explore flavours and techniques that transform mundane routines into exciting experiences, because cooking most part of the year can get meh. My husband knows his way around the kitchen and when I do feel worn out of ideas or just the cooking he's always ready to take over, I appreciate this because when we are honest, I'm the one with more of an inbuilt passion for cooking. With this resolution I hope to encourage our readers and Facebook followers to delve into crafting creative resolutions in their own kitchens.

My resolutions will not only serve as benchmarks for personal growth but also as invitations to explore diverse cuisines. With the return of school comes the challenge of preparing nutritious and appealing lunches that cater to both taste and health. By examining essential kitchen tools and ingredients that facilitate efficient meal preparation Iei am struggling to find a nice size lunchbox with compartments for the perfect #Mopako101, I haven't given up, I will find them. I will try by all means to provide practical insights for busy parents or students navigating their own culinary endeavours. It’s Back to School and creating healthy #Mopako101 meal prep with Danone and Nutriday is a focal point in my kitchen explorations. We will be integrating wholesome ingredients into easy-to-prepare meals, my one son has gone super healthy and so a lot more effort will definitely be needed here as I balance nourishing both body and spirit amidst the hustle of daily life. The transition from festive indulgence to a more health-conscious lifestyle has its Pros and Cons. After a season of lavish feasts and celebratory gatherings, the body needs a break from heavy, rich foods. Embracing lighter eating habits not only aids in physical detoxification but also fosters mental clarity and emotional balance I’ve discovered.

The notion that healthy eating is synonymous with high costs is a misconception; in reality, many wholesome ingredients are accessible and budget-friendly. Seasonal produce, whole grains, and legumes offer an array of options that promote wellness without straining financial resources. I made a Caribbean inspired Couscous Salad. Absolutely delicious and ready in just a couple of minutes. My Cold Couscous Salad is filled with island-inspired sweet mango, creamy avocado, red onion(Ahh I shouldn't have touched it, my fingers are so itchy 24hrs later. I thought I was quick, I thought I washed my hands thoroughly. This onion allergy is peculiar and irritating at the same time. I can't eat onion either, so I was chopping it up for hubbys salad. Usually if he's in the kitchen he will ask to chop onion so i add it to his meals, other times i call him over to, but when I am in my zone i often skip using onion), and finished with a bright vinaigrette dressing. This is a light, healthy meal or side dish that will have everyone asking for seconds. Leftovers are also such gold and are easily overlooked, there was half a chicken left over and I added a breast to this yum salad. Yes, this dish is fabulous to make ahead of time. Just be sure to add the avocado right before stirring it so it doesn't turn brown.

Ingredients

1 cup couscous 1 mango, diced ½ red onion, diced 1 avocado, diced ½ cup cilantro, chopped (Optional)

Salad Dressing

1 tablespoon avocado oil 1 tablespoon white wine vinegar 1 lime, juiced 1 tablespoon honey salt and pepper to taste

Instructions

1. Cook the couscous according to package instructions. Fluff and allow it to cool. 2. In the bottom of a large mixing bowl whisk together avocado oil, white wine vinegar, lime juice, honey and salt and pepper. 3. Put the couscous, mango, red onion and cilantro in the bowl. Toss until the couscous salad recipe is well coated.
