It is truly my happy place. After a long week, there is absolutely nothing better than switching off my phone, putting on my favourite playlist, and getting my hands into some dough. Baking is pure therapy. It forces you to slow down, measure out your ingredients, and just be present in the moment. If you dont....you’ll definitely get a folp of a bake. The repeated motions of creaming butter and sugar, the rhythmic rolling of dough into perfect little shapes. It is incredibly calming and grounding. And honestly, the absolute best part of the whole process has to be the aroma. The moment these easy ginger biscuits hit the oven, the entire house fills with the warmest, most comforting scent you can imagine. It is a rich, sweet, and spicy perfume that instantly makes the space feel like a sanctuary. That scent alone is enough to wash away any lingering stress. By the time the timer goes off, you do not just have a delicious treat; you have a home that smells completely amazing, wrapping everyone inside it in a warm hug. These ginger biscuits are going to become an absolute staple in my household, and I promise they will become one in yours too. What I love most about them is how they bring the whole family together.
The second that spicy, sweet aroma starts wafting through the hallways, you will notice everyone slowly wandering into the kitchen, drawn in by the smell, eagerly waiting for the biscuits to cool down just enough to eat. They are a massive hit with both the kids and the adults. There is something so nostalgic and universally loved about a good ginger biscuit.
They are perfect for our traditional family tea time, where we all sit down, catch up, and dunk them into mugs of hot Tetley tea or strong coffee. They have that perfect, satisfying crunch on the outside with a lovely, slightly chewy texture on the inside.
But if you want to take things to the absolute next level, especially on a warm afternoon you have to try turning them into ice cream sandwiches.
Just take a scoop of creamy vanilla bean ice cream, sandwich it tightly between two of these golden ginger biscuits, and you have a gourmet dessert that the kids will go absolutely crazy for.
The contrast between the cold, sweet ice cream and the warm, fiery punch of the ginger is pure magic.
The absolute secret to getting that perfect, authentic, punchy flavour in these biscuits is using Hinds Ginger Powder. I swear by it because it gives you that beautiful, deep warmth and distinct ginger kick without being overpowering.
It blends so smoothly into the flour, ensuring that every single bite of your biscuit is perfectly spiced. Plus, this recipe is incredibly easy and foolproof, making it the perfect baking project for beginners or when you want a quick, stress free baking session.
Here is exactly how you can also make these beautiful biscuits at home.
INGREDIENTS
250g butter, softened at room temperature 1 cup granulated white sugar 1 large egg 1/4 cup golden syrup 2 cups cake flour 2 teaspoons baking soda 3 teaspoons Hinds Ginger Powder 1 teaspoon Hinds Cinnamon 1/2 teaspoon salt Extra white sugar in a small bowl for rolling
INSTRUCTIONS
1. Preheat your oven to 180°C and line two large baking sheets with parchment paper to prevent sticking. 2. In a large mixing bowl, beat the softened butter and granulated white sugar together using a hand mixer or stand mixer until the mixture becomes pale, light, and fluffy. 3. Add the egg and the golden syrup to the butter mixture, beating well until everything is completely combined and smooth. 4. In a separate bowl, whisk together the flour, baking soda, Hinds Ginger Powder, Hinds cinnamon, and salt until evenly mixed. 5. Gradually add the dry ingredients to the wet ingredients, mixing gently on low speed or with a wooden spoon just until a soft, uniform dough forms. 6. Scoop out tablespoon sized portions of the dough and roll them between your palms into neat, smooth balls. 7. Roll each dough ball generously in the small bowl of extra white sugar until it is completely coated. 8. Place the coated dough balls onto your prepared baking sheets, leaving about 5cm of space between each one to allow them room to spread as they bake. 9. Bake in the preheated oven for 12 to 15 minutes, or until the biscuits have spread, developed beautiful cracks on top, and turned a gorgeous golden-brown colour. 10. Remove them from the oven and let them cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely and become perfectly crunchy.
