INSIDE CHELLZ KITCHEN

In a world that many a times feels chaotic and demanding, I find that the kitchen becomes a sanctuary where you can slow down and find grounding in the present moment.
Although so many times I have to ask the boys to please get out of the kitchen so I can be alone. Every step of the way needs your full attention, from making sure the measurements are exact so your cake doesn't flop, to watching simple ingredients turn into something delish.
This attention to detail brings a Shitō-ryū sense of control and mindfulness, turning a routine task into a little bit of meditation. As the batter bakes, the warm, comforting smells fill the house and envelope you like a warm, tight hug you didn't know you needed.
This embrace has the power to melt away the stress of the day, getting you in your feels, nostalgia, and pure happiness. While baking for a crowd is joyful, there is something special about baking just for yourself.
While many people shy away from making sweet bakes because they fear overindulgence, enjoying one serving of banana cake isn't unhealthy at all. They say everything in moderation is ok, and nourishing your happiness with a single serve dessert is the perfect balance.
You get all the satisfaction of a rich, homemade sugar injection without the pressure of a massive leftover cake sitting on your counter tempting you for days. It is a guilt-free celebration of self-care that proves you do not need a special occasion or a house full of guests to treat yourself to something amazing.
Banana cake is truly a timeless classic that holds an appeal across generations. It is hard not to love it, and most likely the whole family will like it, making it the ultimate crowd-pleaser even when scaled down to a personal portion.
The natural sweetness of a ripe banana creates a moist, tender crumb that appeals to both children and adults alike. It is a comforting flavour profile that feels deeply familiar, reminding us of childhood kitchens. Toss in some chocolate chips to make the cake even more exciting.
To elevate this experience to its absolute peak, you must pair your fresh bake with the perfect accompaniment. It is essential to enjoy the cake with a hot cup of tea or coffee because it's the season for warm beverages, and nothing completes a cozy moment quite like a steaming mug in your hands.
The contrast between the rich, cinnamon-infused sweetness of the cake and the robust, bitter notes of a dark roast coffee or the soothing herbal undertones of a hot tea creates a flawless harmony on your palate.
As the temperature drops outside, wrapping your hands around a warm cup while savouring a fresh, warm cake creates pure bliss in your day. Creating this masterpiece requires only a few basic staples and that one overripe banana sitting on your counter.
INGREDIENTS 1 banana (ripe) 1 egg 1 teaspoon vanilla extract 3 tablespoons oil ½ cup + 1 tablespoon cake flour ¼ cup brown sugar ¼ teaspoon baking soda ¼ teaspoon salt ⅓ cup walnuts (optional) ⅓ Chocolate Chips (optional)
INSTRUCTIONS In a medium size mixing bowl, mash the banana. Then stir in the egg, vanilla extract, and oil until combined. Then, add all at once the flour, sugars, baking soda, and salt.
