Soft, creamy, almost airy cloud like, this dessert continues to spark curiosity far beyond any border and ocean, and it’s easy to see why. In a world that feels increasingly fast and overwhelming, this simple cheesecake offers comfort and a sense of play. It looks indulgent, yet feels light. I’ll be honest I wasn’t entirely sure why this particular cheesecake had taken off the way it did. We’ve seen viral foods come and go: whipped coffee which we love, tortilla hacks are a yes, baked feta and cloud bread I know of but have not messed with.

Shalom decided to make his version using Nutriday yoghurt meant for his #Mopako101. The excitement was almost unbearable to watch. He mixed, pressed, chilled, and then waited or rather, tried to wait. Dawn couldn’t come fast enough. I don’t think the boy slept. By morning, he declared it breakfast.
The joy on his face was pure and unfiltered. Later that day, I headed out to get ingredients, curious now. As I walked through the grocery store, I thought about all the versions of this cheesecake I had seen. Some used plain yoghurt, some cottage cheese. Cookies ranged, Oreos and Biscoff.
Toppings varied honey, fruit, chocolate, jams. It was clear that this cheesecake was adaptable and easily personalised.
For my own version of the Viral Japanese Cheesecake, I opted for cottage cheese. I’m currently on a mini journey of discovering healthier dessert options so as to not deprive myself, but to find balance. Desserts that feel indulgent yet nourishing.
