Botswana's 'Two Seasons' inspire a Focaccia Masterpiece!

In most parts of the world, it’s a gradual awakening, a transition from winter.

But here in our beloved Bdub, ‘innit, we all know : Spring just springs, often with a pop-up store, and before you can even properly adjust, it’s already a sweltering embrace of summer.

They say we only truly have two seasons, and honestly, who are we to argue when the transition from 'mild” to 'scorching'.

Today was my first day using my hand held electronic fan as I was sweating from head to toe stepping out into meetings. I ended up giving it to a friend!. We all have those moments of spontaneous generosity, don't we? She looked good with it, and I was feeling particularly giving, I suppose.

Amidst the sneezing fits and watery eyes, there’s an undeniable magic in Mother Nature’s artistry during this time of year. Our outside world transforms into a canvas of vibrant colours, a spectacle of greens, purples, yellows, and the fiery oranges of blossoming trees I love to appreciate, allergies and all.

Last week also marked the return to routine for my boys, heading back to school, and for me, it meant diving back into my weekly Arts and Craft Class at Tiny Tots Play Group. We embarked on a floral adventure, where I guided the little hands through the simple joy of cutting out vibrant, colourful flowers and decorating them with a delightful border of purple finger paint.

There’s something so pure, about the creativity of children, isn’t there? Their fearless approach to colour and form is inspiring. It was in that very class, surrounded by the joyful chaos of glitter and glue, that a spark ignited in my own kitchen creativity corner. Not in the way one might expect, like a floral-themed cake or delicate cupcakes.

This inspiration took a more of savoury turn. It whispered to me of dough, of fresh vegetables, and the boundless possibilities of a culinary garden.

INGREDIENTS

2 cups Cake Flour 1/2 Cup Nutriday Plain Yoghurt 4 Teaspoons Baking Powder Pinch of Salt Onion Spring Onion Cherry Tomatoes

INSTRUCTIONS

Mix the flour, baking powder and salt then combine the NutriDay Plain. Turn onto a floured surface and knead several times. Form into a ball. Pour 2 tablespoons of oil into a cast iron skillet. Add the ball of dough and flatten slightly. Turn to coat both sides with olive oil. Flatten dough to fill the pan. Press fingertips into the dough to form dimples. Drizzle with olive oil and decorate with veggies. Bake at 200°C for 30-35 minutes. Allow it to cool completely before cutting.
