I know there’s zucchini ones and I trust they taste amazing because there’s just something about chocolate that makes everything taste better. Chocolate makes the world a better place, sweet tooth or not.

I’m yet to meet a person who has never liked Chocolate in their life. In actively looking for desserts to make with Nutriday Yoghurt for Dessert Month (October), I discovered Plain Yoghurt healthy Brownies.

Brownies are one of the greatest desserts ever but they can be too sweet. Substituting some of the more unhealthy ingredients for healthier ones is a huge bonus.

Swapping out oil and butter for yoghurt is genius, a game-changer and you won’t even be able to taste that you altered your conventional ingredients! Baking with yoghurt, truly feels revolutionary. It’s like you are getting the best of both worlds all in one sitting. Dessert no longer needs to be classified as an unhealthy Sugar injection. Chopping up chocolate and or adding chocolate chips, makes for a texturally pleasing brownies that is more ooeey and gooeey. I encourage you to toss them in (call it a cheat day), I won’t tell if you won’t. To substitute chocolate chips, I topped the brownies with a chocolate spread after they cooled. Best believe these were the highlight of my kid’s lunch boxes. I wish I could have seen their faces at school when they open their lunchboxes because they are always looking forward to getting into their lunches as they don’t know what to expect most of the time and I can tell the anticipation it’s always a treat.

INGREDIENTS

1/2 cup chopped chocolate 1 cup Nutriday plain yoghurt 1/4 cup sugar 3/4 cup cake flour 1/2 cup cocoa 1/2 tsp baking soda Note: Baking soda is pure sodium bicarbonate, a fine white powder that has many uses. You may wonder about bicarbonate of soda vs. baking soda, but they are simply alternate terms for the same ingredient. If your recipe calls for bicarbonate of soda, it is simply referring to baking soda/powder. 1/2 cup milk 1 cup chocolate chips (optional) INSTRUCTIONS

Preheat the oven to 180C. Line a pan with parchment paper, and set aside. In a microwave-safe bowl, add your chopped chocolate. Melt your chocolate. Let sit for one to two minutes, then add yoghurt and sugar. Whisk until smooth and transfer to a large mixing bowl. Add the flour, cocoa powder, baking soda, mix until just combined. Add your milk and mix well, until fully mixed. Now fold in your chocolate chips, if you are using them. Transfer to the lined pan and bake the brownie for 20-25 minutes, or until a toothpick comes out clean when you poke cautiously. Remove from the oven and let cool in the pan for 10 minutes, before carefully transferring to a wire rack and allowing to cool completely before enjoying with a tall glass of Delta Fresh Milk or Ice Cream!!! The traditional Vanilla or Vanilla with Chocolate Sauce Country Fresh ice cream would be a match made in heaven with these.
