One comedian joked to say winter is only just knocking. Crazy to imagine, but do keep warm, wrapped up and most importantly eat well.

This bowl of goodness is made up of nutritious lentils, which are rich in protein and fibre, combined with potatoes for a healthy and flavourful soup.

This Easy Lentil Potato Soup Recipe comes together in under 30 minutes and is perfect for an effortless weekday family meal. Many of us know what it is to end a day on a high or low note and have little to no energy to make a good home cooked meal. Meals like these make it easy to turn your back on quick, gratifying junk food. My family loves lentils and specifically lentil soup.

I personally feel like I have to cook soups like this Easy Lentil Potato Soup more often. Adding potatoes to this Easy Lentil Potato Soup makes is a lot more nutritious and filling. I have found out that soups with just lentils tend to often be pretty light and good for lunch or a side, but not a complete meal. They also go really well with steamed rice. My boys all love this hearty soup, so I needed to come up with more simple soup recipes. You can also blend it for small children if you leave out some of the more fragrant and powerful spices.

INGREDIENTS

2 tbsp vegetable oil

1 tsp garlic paste or readily chopped Knob of grated ginger

1/2 cup diced onion

1 carrot, large

2 tbsp tomato paste

2 cans lentils 3 medium potatoes — cut into bite sized pieces

2 tsp salt 1/4 tsp black pepper

1/2 tsp oregano

1 cup water plus a spoon of flour

INSTRUCTIONS

Heat oil in a large pot. Add onion and cook for one minute. Add garlic and carrots. Cook for two-three minutes, stirring frequently, to prevent charring. Add in the tomato paste. Cook for one minute. Add potatoes and pour water on top. Add salt, pepper, thyme and oregano. Cover and bring to a boil. Reduce heat to medium-low and simmer for five minutes, add carrots and simmer for another five minutes. Once carrots and potatoes are almost tender. Add canned Lentils and cook for five minutes while stirring to bring flavours together. Taste the soup and add more salt and pepper if needed. Serve warm.
